Mee Hoon Soup

Ingredients:
500 gms vermicelli-soaked to soften
60 gms shrimps-peeled
125 gms mustard greens
2 cloves garlic
6 cups chicken stock
1/4 cup thin soy sauce
3 tbsps oil
Salt to taste

Method:
1. Heat oil and fry garlic until fragrant for 1 minute.
2. Add vermicelli and fry for 2 minutes. Transfer to a serving bowl.
3. Add shrimps and soy sauce. Season to taste.
4. Pour in the stock and bring to boil.
5. Add the mustard greens and simmer for 3 minutes.
6. To serve, pour soup over the vermicelli.
