Spicy Fried Vermicelli

Ingredients:
500 gms rice vermicelli-soaked until soft
500 gms beansprouts-tails removed & washed well
600 gms fresh prawns
2 pieces bean curd-sliced thinly & fried
10 dried red chillies
8 shallots*
3 cloves garlic*
2 large onions-sliced*
*ground together
4 hard boiled eggs-quartered
5 small limes-cut into 2
5 stalks chives
Salt to taste
2 tbsps oil

Method:
1. Heat oil in a deep pan & fry the ground ingredients until fragrant.
2. Add in the prawns & fry until cooked. Put in the sliced onions & stir.
3. Add in the beansprouts & stir-fry but not too limp. Put in the chives & fried bean curd.
4. Add in the vermicelli & stir well to mix. Season to taste with salt.
5. Dish out serve immediately garnished with hard boiled eggs & lime.
