Brinjal Curry

Ingredients:
4 brinjals-slices thickly
5 shallots-sliced
2 cloves garlic-sliced
2 tbsp curry powder-blended with 2 tbsp water
2 cups thick coconut milk-extracted from 1 coconut
4 cups thin coconut milk-extracted form 1 coconut
1 sprig curry leaves
2 tbsp oil
3 pieces asam gelugor (see he glossary)
Salt to taste

Method:
1. Heat oil and fry shallots and garlic until fragrant.
2. Add in curry powder and fry until fragrant,making sure it does not burn.
3. Add in the thin coconut milk, asam gelugor and curry leaves. Season to taste and bring to boil.
4. Add in the brinjals and boil until almost tender.
5. Serve hot with plain boiled rice.
