Sweet & Sour Prawns

Ingredients:
500 gms medium-sized prawns
3 cups cold wayer
1 tsp fresh ginger-grated
2 white eggs
3 tbsps cornflour
5 stalks spring onion
1 small green cucumber-sliced
1 small onion-chopped
1 large tomato-sliced
Salt to taste
Oil for deep fry

For the sauce:
1/4 cup white vinegar
3/4 cup orange juice
3 tbsps sugar
1 tbsp arrowroot
1 tbsp cold water

Method:
1. Shell & devein the prawns,leaving only the last segment of the shell & tail intact.
2. Wash & soak them in cold water with half teaspoon of salt for a couple of minutes.
3. Drain & blot them in kitchen paper.
4. Place them in a dry bowl & sprinkle wit another half tea spooful of salt.
5. Sprinkle the ginger over & mix well.
6. Add the white eggs & cornflour & stir throughly to ensure the prawns are thoroughly coated with mixture.
7. Cover & refrigerate for 3 hours or longer.

Prepare the sauce:
1. Combine the white vinegar,orange juice & salt.
2. Bring to the boil,remove from heat & stir in the arrowroot mixed with cold water.
3. Return to heat & stir continously until the sauce boils & thickens.

Fry the prawns:
1. Heat enough oil for deep frying.
2. When the oil is hot,put in half of the prawns & fry for a minutes-be sure not to overcook them or they will lost their succulence & become leathery.
3. Lift out with a wire spoon & drain on greese-proof paper.
4. Heat the oil & fry the remaining prawns.
5. After draining,place the prawns in serving dish & pour the sauce.
6. Garnish with spring onion,cucumber,onions & tomato.
